- 1 cup almonds
- 1 cup rolled oats
- ¼ cup chocolate protein powder (I used plant based)
- 2 tablespoons cocoa powder
- ⅓ cup chocolate chips
- ¾ cup almond butter
- ¼ cup honey
- ½ teaspoon peppermint extract
- 1 teaspoon water
Instructions
- Add cashews and rolled oats to a high-power food processor. Run on high for about 1 minute, or until the mixture becomes finely ground. Then add protein powder and cocoa powder, and process for 20 seconds to combine.
- Pour in the wet ingredients and process on high for about 1 minute, or until the dough forms.
- Next, add mini chocolate chips and pulse until they mix in evenly.
- Scoop a heaping tablespoon of dough into your palms and roll it into balls. Continue until you use all the dough.
