  • 4 strips bacon diced and cooked until crispy
  • 1 medium sweet yellow onion diced
  • 1 clove garlic minced
  • 1 pound green beans cleaned and ends trimmed
  • ½ teaspoon black pepper freshly ground
  • 1 teaspoon kosher salt
  • 1/8 teaspoon red pepper flakes or to taste
  • ¼ cup water
  • 3 tablespoons bourbon
  • 3 tablespoons dark brown sugar

Instructions

  1. Cut 4 bacon strips into 1/2-inch pieces. Cook the pieces in a 12-inch skillet over medium heat until they turn crisp without burning. Remove the bacon and set it aside for garnish, but keep the rendered fat in the pan.
  2. Add 1 medium sweet yellow onion, diced, to the bacon fat. Sauté until the onion becomes translucent. Stir in 1 clove of minced garlic and cook for 15 to 30 seconds, just until the garlic softens and releases its aroma.
  3. Add 1 pound of fresh green beans to the skillet. Season with 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1/8 teaspoon of red pepper flakes. Cook over medium heat for 6 to 8 minutes, stirring occasionally, until the beans develop light brown spots.
  4. Pour in 1/4 cup of water. Cover the skillet and let the beans cook for 2 minutes. They should remain bright green and retain a crisp texture.
  5. Remove the lid. Add 3 tablespoons of bourbon and 3 tablespoons of dark brown sugar. Continue cooking for 4 to 5 minutes, stirring often, until the beans are barely tender but still crisp.
  6. Taste the beans and adjust with additional salt if needed. Transfer the beans to a serving dish and sprinkle the reserved crisped bacon on top. Serve immediately.
