Mary berry Healthy Hot Spinach Dip

I know you’re asking how a hot spinach dip can be so good without being crammed with tons of cheese and sour cream. Well, this is one recipe you’re gonna want to put in your party arsenal this holiday season. Bring this to your next get together and I promise, it will be the hit of the evening!
What makes this hot spinach dip healthy? The “cream” sauce isn’t cream at all. It’s made from well seasoned pureed cauliflower. There is just a little bit of cheese, but not too much.
Serve this appetizer hot with baked pita chips. Who knew healthy tasted so good?
Healthy Hot Spinach Dip

- 1 package of frozen cauliflower 12 oz.)
- 1 T garlic, minced
- 2 tsp onion powder
- ½ tsp crushed red pepper flakes
- 1 T olive oil
- 2 T water
- 1 packet Goya Ham Concentrate
- ½ tsp salt
- ½ tsp black pepper
- 4 oz. plain Greek yogurt
- 4 oz. water chestnuts, chopped
- 1 package of frozen spinach (12 oz.), thawed
- ¼ cup Parmesan cheese, shredded (plus 1 T for topping)
- ¼ cup mozzarella cheese, shredded (plus 1 T for topping)
- Preheat oven to 350°
- Boil the cauliflower in water for 10-15 minutes or until soft and drain
- Place the cauliflower, garlic, onion powder, red pepper flakes, olive oil, water, ham concentrate, salt and pepper in a blender and puree
- In a medium bowl, stir the cauliflower puree, Greek yogurt, water chestnuts, spinach, ¼ cup Parmesan cheese and ¼ cup mozzarella cheese until well combined
- Place the mixture into a small baking dish and top with the remaining Parmesan and mozzarella cheeses
- Bake for 25 minutes or until the dip is bubbly
- Serve hot with baked pita chips
