This quick and easy appetizer recipe is great for a last minute get together or for a large crowd. Make as many as you need and maybe a few extra for yourself!

When I was planning Ellie’s birthday party food, I knew I wanted to make mostly everything that we would serve at the party, but I also knew that I didn’t want to make myself crazy over it – something that I can easily do if I don’t plan accordingly. So I tried to come up with some really simple appetizers that I could throw together quickly and still be somewhat proud of.

The food menu included slow cooker Asian pulled pork sliders, these mini spinach artichoke tarts, antipasto skewers, olive tapenade, extra creamy ranch dip, and hummus (which I normally make, but I decided to buy this time). And, of course, there were chips, crackers and cut up veggies to go with all the dips, and cake, lots and lots of cake.

These tarts were so simple it’s crazy. I bought some pre-made artichoke dip from Costco and chopped up some cooked bacon (which I cooked the night before). I stir the bacon into the dip and filled little phyllo tart shells that I found in the grocery freezer section. I baked them in the oven for 10 minutes to warm up the dip, and that was it.

The tarts were perfect little bites for the party. The bacon added just the right amount of saltiness to the dip. I’m so happy with how they turned out, and they were so simple to make.

Ingredients

  • 6 slices bacon, cooked and chopped
  • 3 cups store-bought spinach artichoke dip
  • 60 mini phyllo dough tart shells

Instructions

  1. Preheat oven to 400˚F (200˚C) and line a baking sheet with parchment paper.
  2. In a bowl, stir together the bacon and spinach artichoke dip. Fill each tart shell with dip.
  3. Bake for 10 minutes or until dip is fully heated.
